Today I sat down to make my grocery list and drew a blank. Nothing sounded good to eat. I briefly surfed the Internet for ideas and still nothing sparked me interest except quinoa. I've seen this mysterious grain in the stores and keep hearing the hype of it so today I decided to give it a try. The only thing was, I didn't know what to do with it. After seeing a lot of information that people substitute it for rice and a conversation with my cousin, I decided to make my own dish. Ambitious I know :o)
Here's what you'll need
1 pkg Lean turkey kielbasa sausage, sliced
1 large green pepper, sliced
1 large red pepper, sliced
1 medium onion, sliced
2 garlic cloves, minced
1 8 oz can tomato sauce
1/2 tsp oregano
1/4 tsp salt
Dash of ground black pepper
1 1/2 cups quinoa, uncooked
Begin by rinsing the quinoa. Prepare according to manufacturer's recommendations.

While the quinoa is cooking, rinse and sliced your peppers and onions.
Mince the garlic.
Slice the sausage and cut in half.
Slice the mushrooms.
In a large sautee pan, add some olive oil or no-stick cooking spray. Add sausage, peppers, onions, and garlic. Sautee until vegetables soften.
Add seasonings.
Add mushrooms and tomato sauce. Stir to combine. Simmer 10 to 15 minutes on medium low.
Serve over quinoa.
This meal ended up being delicious and very filling. The quinoa is packed full of protein making it a more filling option than rice. By using the turkey sausage (at 90 calories a serving) and quinoa, this healthy meal ended up being low in calories (only 403) and high in fiber (5.9 grams). It was very yummy and I must say I do like quinoa.
